As Executive Chef of COMO Hotels and Resorts’ newest property, the stunning COMO Castello Del Nero in Tuscany, Chef Giovanni proudly leads the kitchen of Michelin-Star restaurant, La Torre.
His incredible passion for utilising seasonal ingredients and modern cooking techniques has helped earn La Torre an outstanding reputation for maximising the flavours of raw ingredients, many of which are sourced from the restaurant’s kitchen-garden.
The menu for this evening promises to showcase Western Australia’s incredible summer produce married with extraordinary Italian culinary flare. Think dishes that evoke time spent in a picturesque Italian summer such as Shellfish Mosaic featuring red prawns, lobster and crab or sea salt marinated kingfish with citrus, sprouts and steamed vegetables.
